The Municipal Market becomes the temple of fresh produce from the bay of Xàbia

This morning, the Municipal Mercat de Xàbia hosted the Sabors de Mar conference, organized by the Punt Nàutic del Creama and the Department of Economic Dynamization of the Town hall. The event aimed to highlight the value of fresh produce from the bay, especially the fish that arrives daily at the local fish market.

At the inauguration, the Councilor for Economic Dynamization, juanlu cardona, highlighted the importance of establishing a direct link between fishermen and restaurateurs in the Municipal Market. Cardona announced that this day was just the beginning of a series of initiatives aimed at promoting the consumption of local products, particularly those that come from the region and that are distributed in the Xàbia market.

The representatives of the Fishermen's Guild emphasized the difficulties faced by the primary sector, including the tax and bureaucratic burden. In addition, they highlighted the importance of fish markets as the first point of fish traceability, pointing out that any product that does not pass through the fish market is not properly registered or labeled, which constitutes an illegal sale.

During the day, the use of less conventional fish species, known as discarded fish, was highlighted. Presentations were also offered on the situation of the sector in the Marina Alta and innovative culinary proposals, such as those presented by chef Borja Susilla from the Michelin Star Restaurant Tula. The chef has offered a showcooking in which he has prepared a Coca de moixa, with avocado beets and quick Suque with serrano, rat and spider, stew juice and artichokes.

The event culminated with a tasting of salted fish offered by the Alma Marina company and a portion of all i pebre de gatet prepared by Ximo Garreta, a prominent representative of the local gastronomic sector.
