A new pizza-flavored award arrives in Xàbia. On this occasion, the best 'Gluten Free' pizza in Spain 2022 is made by a pizza chef from Xabiero, Alessandro Damiano de The Pizza Factory. This was determined by the jury of the 6th Spanish Championship 'Pizza for passion' held a few days ago in Granada.
Dozens of pizza makers, from different cities, competed in Granada to make the best pizza where, of course, the best dough and the best flavor are valued. The passion and dedication of each chef to be the best was on the table, and in the category of Gluten Free Pizza, the first prize at the national level went to the master pizza chef from Xàbia.
The pizza, made with pumpkin mozzarella cream, gorgonzola sauce, crispy bacon and chestnuts, is the new delicacy for celiacs that will be available every Thursday with prior reservation.
Other awards: Best Gourmet Pizza and 2nd Best Classic Pizza
It should be remembered that Alessandro already won another of the great prizes in Spain in pizza a few months ago. It was the one of Best Classic Gourmet Pizza achieved in the I Championship of Gourmet Pizzas by Magma de Cabreiroá last April.
The Gourmet pizza is made up of a fermented dough for 48 hours, two types of flour and 70% hydration, on which, once baked, add juice of red prawn heads seasoned with salt and lime juice, a foam of stracciatella cheese with skin of lime, quenelles of prawn tartare seasoned with oil and citrus and slightly spicy sautéed cherry tomatoes with lime caviar.
This creation, made especially for the championship and with which he won the first prize, has a 'more affordable' version in his workshop in Xàbia.
On the other hand, and this same year, one of the members of this team, Nicolás, won the 2nd prize as Best Classic Pizza in the Championship of the Valencian Community. An original pizza that has as ingredients: mozzarella, Italian sausage and sautéed potato.
