The Giulia Restaurant team receives the title of 'mondo pizza accademy'

Last week Giulia Restaurant was visited by a pizzaiolo with a lot of experience to give them special training, oriented to the pizza and bread kneading. For this reason, Giulia's team talks about their novelties in Italian cuisine and pasta.

- Hi Giulia, can you tell us what kind of training you received and why you are credited.

- Good morning, I explain. Last week we did a specialization course in pizza kneading and baking. An experienced pizzaiolo, Dante Daga, came from Italy, and we took an intensive 5 day course. We got the title of the 'Mondo Pizza Accademy'.

- What did you learn and what are you going to apply to your kitchen?

- We were training in the management of different doughs with different flours, such as whole grains, seeds and Chia. We also learned about mass preparation through our own sourdough, with fermentations at 24 - 48 hours, which implies a contribution of flavors and acidity control of the dough and at the same time lightness, as well as a much more digestible final product . We wanted to improve pizza, our flagship product, and introduce part of our usual pizza. Soon we will have a rustic pizza similar to pizza verace napoletana. This one, we'll call it pizzagiulia, and will be characterized by its elaboration with long fermentations, and a thin mass with higher edges and with unique products. Like pizza with Sicilian capers, Cantabrian anchovies and buffalo mozzarella DOP.

- Great, this pizza sounds great. And for your bread?

- We are also very proud to make our bread, in this case we have opted for a cake homemade, that we will realize daily. We want to get our philosophy, which is to develop all our products, from bread to desserts, the satisfaction of knowing that what they eat in our restaurant is unique, neither better nor worse, simply ours, and that is what we want that our client perceives.

- In addition, we know that you have a very special event dedicated to fresh drinks now that summer is coming ...

- Indeed, the next 1 of June, Friday, from the 19: 30h to the 23h, we will welcome the summer from Restaurante Giulia, with a demonstration of cocktails, special sangria and coffees, by the hand of his master cocktail maker.
